Kitchen Creations: Niihau lamb arancini/ fried risotto balls

Chef Ronnie from Tiki's Grill and Bar dishes up some delicious local lamb that he braised. He also made risotto and then cooled it before stuffing it with lamb and creating balls of rice. He put it in egg, flour and panko and fried it up.
