Turkey Taquitos with Guacamole

1 pound leftover turkey, shredded

¼ cup chicken stock

½ t dried oregano

½ t cumin

½ t onion powder

½ t garlic salt

1 package corn tortillas

In a heavy saucepan, heat all the ingredients until turkey is nice and moist, shredded and flavored well.  Taste, Taste, Taste.  You may want to adjust the seasoning to your liking.  Set turkey aside.  In a nonstick pan, heat a couple of tablespoons of canola oil on medium high heat.  Lightly cook the tortillas in the oil for a couple seconds on both sides and set aside.  Once all the tortillas have been lightly fried, begin adding the filling.  Use about 2-3 tablespoons of the turkey and roll up the taquitos and place them back into the oil seam side down.  Once the seam of the taquito has sealed begin rotating until all sides are a nice golden brown.

Guacamole

2 avocados

¼ cup water

¼ cup jarred salsa

2 cloves garlic

Salt and pepper to taste

Combine all ingredients in a food processor and blend well.  This is not a chunky guacamole,  it should be on the smooth side.  Enjoy!
