Cranberry Chutney

Chef Stephanie van Loon

1 bag fresh cranberries

1 medium onion

2 medium granny smith apples

1 ¼ cup sugar

½ cup chopped walnuts

½ cup water

1/8 t ground cloves

1/8 t ground allspice

½ cup raisin

½ cups packed brown sugar

¼ cup cider vinegar

1t cinnamon

1t ginger

Rinse cranberries.  Peel the apples, quarter and dice into small pieces.  Peel and dice the onion.

Place sugar and water in a pot and bring to a boil.  Add all remaining ingredients and bring back up to a boil.  Boil over high heat and then down to a simmer.  Simmer uncovered for 20-25 minutes.  When mixture is finished, add walnuts.  Can make the night before and store in a sealed container for up to one week.  This chutney is a great replacement for cranberry sauce and works well on leftover turkey sandwiches.  Enjoy!
