Shrimp and Toast

1T butter
4T olive oil
1t fresh chopped ginger
4 cloves chopped garlic
20 Tiger prawns or other larger shrimp
2 diced red chilies
1-2 lemons
¼ cup fresh chopped parsley
Salt and pepper to taste
1 baguette sliced and toasted

In a sauce pan, heat the butter and oil.  Add the garlic, ginger, chilli, and shrimp.  Sautee for about 3 minutes.  Turn the heat down and add the parsley and the juice of one lemon.  Remove from heat, taste it, it may need more lemon juice.  Season with salt and pepper to taste.  Serve with toasted baguette.  I like to serve the shrimp in a bowl and have the bread on the side so I can dip my bread in the beautiful sauce!  Enjoy!!
