Lawrence, KS - Residents in Kansas are becoming acquainted with a food dish popular in Hawaii, thanks to a local couple that's dishing up homemade noodles in The Sunflower State's first ramen shop.
Before moving to Kansas, Shantel and Tim Grace lived in Hawaii. It was here that they experienced their first ramen noodle shop.
"Ramen is essentially soup, as everybody knows. It's noodles, great broth and for some people it's fun playful toppings," says Shantel Grace.
Inspired by the traditional noodles and homemade toppings from the ramen shops in Hawaii, the couple decided to open up their own restaurant in Kansas called Ramen Bowls.
"If you want something healthy, with incredible nutrition, you want homemade noodles, you want homemade stock bone broth," said Grace. "Then you're going to want something different."
It's been five years since Ramen Bowls opened, and the restaurant has become a major favorite among locals. Their secret? Homemade noodles and toppings.
"We are one of the handful of ramen shops in the U.S. that actually makes traditional Japanese noodles," says Grace.
They make their noodles each morning for all to see, and the noodles have become so popular they supply them to shops in Kansas City and other locations. They even started growing their own ingredients for the noodles.
"The flavor is phenomenal. I feel like every time I come here I get a different broth and I'm never disappointed," says Lacey Sowards, a customer.
"You're going to get a good selection of noodles, and at the same time you're going to get some broth in your spoon, because the ramen spoon is going to keep those noodles nice and hot and beautifully oily while you slurp," says Grace.
Ramen Bowls has even taken their restaurant on the road and plan to sell their stock and homemade noodles so people can make gourmet ramen at home.
