Hawaiian word of the day: Paiai

The Hawaiian Word of the Day is paiai.

Paiai is made up of two smaller words: pai which a bundle of package, and ai which refers to kalo. So, paiai is kalo that has been hand pounded with the least amount of water possible, and wrapped into a ti-leaf bundle.

Paiai goes through a fermentation process which creates beneficial bacteria and allowed paiai to be a food source on long journeys throughout Polynesia.

Not to be confused with poi, paiai has a thick consistency and can be mixed into poi by gradually adding water.

    Nearly a year after a landslide in Kipahulu, repairs are getting underway to fix parts of Piilani Highway at the Nuanualoa Gulch. The repairs are part of a 7-month-long, nearly $2 million project. Daily road closures will begin February 5th as Hawaiian Dredging Construction crews bring in equipment to build a retaining wall, put up guard rails and complete other safety measures.
