Hawaii Freshbox (@HIFreshbox) Executive Chef William Chen demonstrates how to create forest mushroom pasta with pine nuts and mint. It's a vegetarian dish that tastes fresh and delicious. With only a handful of ingredients, here's how you make it at home.
Forest Mushroom Pasta with Pine Nuts and Mint
1 lb Fresh Pasta
1 lb Mixed Mushrooms
1 Shallot, Minced
1 Bunch Mint, leaves picked and roughly chopped
Bring a large pot of water to boil. Season generously with salt.
In a hot saute pan carefully toast the pine nuts, and remove them from the pan. Add 1 tbsp of oil to the pan and the mushrooms. Cook until the mushrooms start to caramelize. Add the minced shallot and season with salt and pepper. Add lemon juice to taste, about 1 TBSP and set aside.
Cook the pasta for 3-4 mins in the boiling water. Drain well and toss into the pan with the mushrooms. Add the pine nuts, mint and lemon zest and toss well. Taste to check seasoning and serve immediately.
