HONOLULU (HawaiiNewsNow) - In this edition of "Ask Will, not Grace", we show you how to make a breakfast to impress. Hawaii Freshbox (@hifreshbox) executive chef William Chen has a recipe that will make extremely fluffy pancakes. He incorporates whipped egg whites, ricotta cheese and fresh lemon peel into the recipe. It's delicious. And yes, they sure are fluffy!
Ricotta Pancakes with Lemon and Blueberries
1 Cup All Purpose Flour
2 Tablespoons Sugar
2 Teaspoons Baking Powder
1/2 Teaspoon Salt
1 Lemon, Zested
1 Cup Milk
2 Eggs, separated
2 Tablespoons Butter, browned
1 Cup Ricotta, drained
Mix together the dry ingredients. In a separate bowl, mix together the milk, egg yolks and butter. Whisk the egg whites into a soft peak.
Mix together the dry and the wet, some clumps are ok. Gently fold in in the cheese and egg white.
Cook on a hot cast iron or griddle, for 2-3 mins per side, until small bubbles form. Add a few blueberries to each cake and cook for another 2 mins.
Keep warm in the oven until all are made. Enjoy!
