FRIED CHICKEN, OUR WAY!
1 3# Chicken, Cut into 10 pieces. (2 Drumsticks, 2 Thighs, 2 Wings, 2 Breasts cut into 2 pieces each)
2 Eggs, Beaten
1 C AP Flour
1 C Seasoned Bread Crumbs
Oil for Frying
SEASONED BREAD CRUMBS
3/4 C Breadcrumbs or Panko
1/4 C Grated Parmesan Cheese
Preheat the oven to 400 degrees.
Season the chicken well with salt and pepper. Lay flat on a lined tray and roast in the oven for 10 mins, or until cooked through.
Allow the chicken to cool completely, Then dust evenly in flour, then dredge in egg then roll well in the seasoned bread crumbs.
Repeat until every piece is completely coated.
Heat the oil to 300 degrees and fry each piece starting with the thighs, drumsticks, wings then the breast meat. Pieces will be crispy in around 5 mins.
Lay cooked pieces over a paper towel to drain. Serve hot with sliced lemons.
