Valentine's Day is coming up. For this edition of "Ask Will not Grace", executive chef William Chen from Hawaii Freshbox (@hifreshbox) shows us how to make crepes. He says they sound like they will be difficult to create, but they're now. In fact, he shows us how to make a savory and a sweet version. Recipes are below.
Basic Crepe Recipe
1 C All Purpose Flour (Use buckwheat flour for savory crepes)
1/4 tsp salt
1 tsp sugar (Omit the sugar for savory crepes)
1 C Whole Milk
2 TBSPS Browned Butter
Mix the ingredients together with a whisk. Let the batter sit for at least an hour, up to overnight for best results.
Use a 1 oz ladle and a non stick pan.
Heat the pan over low-medium heat. Spray the pan with non-stick spray and pour in 1 oz of batter. Cook for 45-60 seconds until the edges look dry and start to curl. Flip and continue cooking.
Place the cooked crepe aside to cool and continue with the rest of the batter. Don't stack the crepes until they are completely cool.
Garnish with you favorite fillings and toppings. Enjoy!
