(CNN) - If there was ever a time to indulge in chocolate, Monday's the day.

It's National Fudge Day.

And to help you kick off the celebration, here's some food for thought.

One of the earliest written recipes for fudge was made popular by a Vassar College student in the late 1880s.

The super sweet confection was a hit and soon women's colleges across the country were coming up with their own versions.

The recipe consisted of sugar, cream, chocolate and butter and now comes in all different flavors.
