True to his philosophy of incorporating more locally sourced ingredients, Kosaka's Valentine's Day dinner begins with an amuse-bouche, Hawaii Island Goat Diary Gougère—rich cheese in a light puff pastry. First course is a gourmet take on Fish & Chips: Hamachi and Caviar Tartare, dressed up with avocado crème and crispy Asian chips, matched with either Adami "Garble" Prosecco from Italy or Mumm Napa "Brut Prestige" Sparkling Wine from California. Second course is a savory Lobster Pot Pie, made with Kona Cold Lobster en Croûte, tarragon crème, Yukon gold potatoes, and baby carrots and peas. Enjoy either a Louise Jadot Pouilly Fuisse from France or a Paul Hobbs "Crossbarn" Chardonnay from California. Follow with a decadent third course of Prime Striploin, topped with caramelized onion jus, Brussels sprouts, and potato purée. Your wine options are a Duckhorn "Decoy" Cabernet Sauvignon or an Obsidian Ridge Cabernet Sauvignon, both from California.

Finally, what's Valentine's Day without chocolate? Indulge your sweet side with a Chocolate Decadence cake with raspberry puree and a wine to match, a Fonseca "Bin 27" Ruby Port from Portugal.
