Cooking Up Simple, Healthy, and Tasty Food with Dr. Carbone

Jennifer Robbins met with Dr. Michele Carbone, MD, PhD. and Director of the University of Hawaii Cancer Center, to cook up simple, healthy and tasty meals. Dr. Carbone believes healthy eating is one of the strongest ways to prevent cancer. His secret to creating a simple and healthy meal that will taste great and won't break the bank, is to use just enough fresh ingredients.    

Fresh Tomato Sauce Pasta Recipe:    

Ingredients:

 Fresh tomatoes x 12

Fresh basil

Garlic cloves x 3-4

Maui Onion x ¾

Any pasta x 16 oz (1 lb)

Extra Virgin Olive Oil x ¼ cup

½ cup grated Romano cheese

Salt to taste

Serves 4-5

Directions:

Cut tomatoes into quarters, dice onion, crush garlic and add to pan. Add in olive oil and cook on high heat for 10 minutes or until tomatoes begin to mush. Add pasta to salted boiling water. Cook pasta until firm and strain. Add strained pasta to tomato sauce and add grated cheese and some additional basil and toss in sauce for 2-3 minutes until pasta absorbs the sauce. Plate and enjoy!
