Cooking Healthy Snacks For Kids

(Hawaii News Now) - Healthy kids recipes may be easier than you think.  Chef Kevin Erving of The Four Seasons Lanai--- is a father and a huge supporter of farm-to-table and has created extensive menus that cater to kids' palettes and parents preferences.

Edamame Hummus

½# Frozen Shelled Edamame
1/4c. Tahini
1t. Lemon Zest
1.5 Lemons Juiced
1 Clove Garlic
1 t. Cumin
1t. Chili powder
1/4c. Water
1t. Kosher Salt
4T. Olive oil

Boil the edamame in salted water 4-5 minutes then cool in ice water and drain in a colander.  Combine all ingredients in food processor except olive oil and puree until smooth.  With the motor running slowly drizzle in the olive oil until combined.
