Fruity Watercress Tofu Salad  With Asian Pear Vinaigrette

1 bunch Watercress
1 bunch Bean Sprouts
1 bunch Green Grapes
1 Orange, cut in segments
Fried Tofu, cut in 3/4" cubes and dusted with cornstarch
1 Asian Pear, sliced

1 Shallot, minced
1 tbsp Fresh Ginger, mince
3 tbsp Rice Vinegar
1 tbsp Mirin
2 tbsp Sesame Oil
1/2 tbsp Soy Sauce
1 tbsp Sugar
1 c Canola Oil
1 Asian Pear

Combine ingredients for vinaigrette in a blender until liquefied. Mix and toss with salad ingredients.
