Goose Adobo

Goose Adobo

3½ pounds goose leg, fat trimmed
2 ounces garlic cloves
4 ounces sliced ginger
3 cups white vinegar
2 teaspoons whole black pepper
1 bay leaf
4 cups soy sauce

Combine all ingredients in a pot and simmer for 45 minutes to 1 hour or until very tender.

Adobo Goose Mixture

8 ounces shredded goose
4 ounces bean sprouts
Sauté bean sprouts for 1 minute, then add goose and re-season.  Wrap in lumpia wrapper and fry in oil until brown. 
Sweet and Sour Sauce
1 cup granulated sugar
1 cup water
1 cup white vinegar
1 ounce lemongrass, this bias cut
½ ounce fine julienne ginger
2 teaspoons minced garlic
2 teaspoons chili garlic paste

Combine sugar, water, and vinegar to melt the sugar granules.  Then add the rest of ingredients and let sit overnight.
