Loco Moco (duck)

4 English muffins
1 (6 ounce) duck breast, seared medium rare
1 ounce hollandaise
1 ounce spinach
4 poached quail eggs

Toast English muffin.  Place sliced duck breast on muffin followed by warm spinach.  Top with poached quail egg and cover with hollandaise.  Drizzle with port wine syrup.
