HONOLULU (HawaiiNewsNow) - Bali Steak & Seafood at the Hilton Hawaiian Village Waikiki Beach Resort is partnering with the Villa Maria Estate out of New Zealand to create a special wine-pairing dinner on Wednesday, June 20.
Chef de Cuisine Matt Alleshouse presents a succulent menu of delights starting with a reception, followed by a four-course dinner, then dessert. The reception begins at 6:30 p.m. with a slow-roasted opah belly salad with tart grapefruit, spicy Thai chili vinaigrette; island tomato poke with sea asparagus and Maui onions and citrus dressing; lime seafood ceviche with crisp cucumber and fried ogo all paired with Villa Maria Private Bin Sauvignon Blanc Marlborough. Dinner dishes include diver scallop crudo with Kiwi olive oil and citrus Kona sea salt paired with Villa Maria Private Bin Riesling Marlborough; the second dinner selection is the grilled lamb loin chops with Surfing Goat Dairy feta and mint pesto and thyme jus paired with Villa Maria Reserve Pinor Noir 2007 Marlborough; the final dinner dish is the Cervena venison rack with Hirabara Farms' mustard greens paired with Esk Valley Merlot-Cabernet Sauvignon-Malbec 2009 Gimblett Gravels, Hawkes Bay. The dessert course is a Waialua Estates' chocolate coffee tart with dark berry jam paired with Villa Maria Cellar Selection Merlot-Cabernet Sauvignon 2008 Hawkes Bay.
