Cactus' culinary exploration of Latin flavors focuses on using local produce from the islands like Shinsato Farms pork from Kahalu'u, Kulana; Kuahiwi beef, veal, and wild boar from the Big Island; as well as sustainably caught and farmed seafood from across the island chain. They're looking for cooks and wait staff but have high standards and want people who are skilled, willing to learn new things and will grow with the company.
