HONOLULU (HawaiiNewsNow)-Chef Carol will be making gluten-free pancakes to celebrate Gluten-free cooking  that is a healthy alternative for the entire family and is not just for someone allergic to wheat products. Check out the video!


1 c. brown sugar

1/2 c. cornstarch

1/2 c. rice flour

1/4 c. sugar

1T. baking powder

1/2 tsp. salt

1/4 tsp. xanthan gum

2 eggs beaten

1 c. milk

1 T. vinegar

1/4 c. vegetable oil

1 tsp. almond or vanilla extract

1/3 c. water as needed to thicken


1 .c diced manago, and pineapple and banana mixed with 2 T. Honey

In a medium bowl, combine fruits and honey mixing well. Cover and refrigerate until needed.

In a small bowl, combine milk and vinegar. Set aside for 5 minutes. Combine dry ingredients in a large bowl. Mix together eggs, oil and almond extract. Stir in milk mixture. Pour egg mix over dry ingredients and stir to blend well. Preheat griddle over medium heat. Lightly oil and the pour batter. Cook approximately 3 minutes per side or until bubbles form, then flip over. Cook until golden brown.
