Sam Choy's Kitchen recipe: Hiyashi Ramen

4 oz. Saimin Noodles
1½ cup Tossed Green Salad
1 Tbsp Spam, thinly sliced
1 Tbsp Kamabuko, thinly sliced
1 Tbsp Cucumber, thinly sliced
1 Tbsp Sushi Egg Omelet, thinly sliced
½ oz. Bean Sprouts, blanched

1 pinch Sesame seeds
½ tsp Nori Strips, thinly sliced
1 tsp Salted Pickled Red Ginger

Hiyashi Sauce:
2 Tbsp Sesame Seed, pounded or mashed until fine
1 dash Sesame Oil
1½ Tbsp Miso Paste
2 Tbsp Sugar
2 Tbsp Aloha Shoyu
2 Tbsp Rice Vinegar
2 Tbsp Mirin

For Hiyashi sauce, in a bowl, combine all ingredients and mix well.

Boil saimin noodles until done.  Chill in ice bath immediately.  Drain and add to tossed grees set in a bowl.  Arrange spam, kamabuko, cucumber, sushi egg and bean sprouts over noodles.  Sprinkle on the sesame seeds, nori strips and red ginger as a garnish.  Top with Hiyashi sauce and enjoy.
