Chef Chai: Fighting Fish

HONOLULU (HawaiiNewsNow)-Chef Chai is back and he has some spicy Fighting fish in Chili Sauce. Check out the video!

Siamese Fighting Fish with Spicy Chili Sauce

Serving 1-2

Ingredients:                   1 Piece of whole Snapper about 2 lbs. (or two fish one lb. size)

Salt and Pepper to taste

2 Tablespoons of all purpose flour to dust over the fish

oil for deep fry the fish

Preparation:

Clean and dry the snapper and crosshatch cut in one-inch squares.

Season with salt, pepper and dust with all-purpose flour.

In a deep pot or pan add the oil and bring it up to about 350-375 degrees and deep fry the whole fish until it turns to a light brown or until crispy.   Set aside.

Ingredients for sauce:

2 tablespoons of vegetable oil for the sauce

2/3 tablespoon chopped garlic

1 tablespoon chopped shallot

1 oz. of slices red onion

1 oz. of slices carrot

1 oz. of slices bell pepper

2 oz. of slices celery

Chili pepper to taste

2 tablespoons of fish sauce or Aloha Shoyu

2 tablespoons of sugar

1 ½ tablespoons of lime juice

Preparation:

~In a sauté pan add 2 tablespoons of vegetable oil, garlic, onion, and shallot sauté for about 30 seconds, just to sweat the onion.

~Then add bell pepper, celery, carrot and chili pepper, sauté for couple minutes then add Fish sauce and sugar, sauté for 30 seconds

~Add lime juice and turn of the heat, (over cook the acid can make your sauce taste bitter) pour on top of the crispy fried fish.
