Manufacturer details reasons for recalling sauce

WAIPIO (HawaiiNewsNow) - First Commercial Kitchen makes, bottles and bags sauces, salad dressings and seasonings.

The secret recipes come from 185 clients that range from big businesses to well-known restaurants to mom and pop companies.

One of its longtime customers is Barb's Favorite Recipes, whose trademark sauce for seafood dishes is now being recalled.

"If there's any doubt of any kind of public health or safety concern, I believe action should be taken immediately," First Commercial Kitchen owner Peter Kam said.

A Food an Drug Administration test of Barb's Local Style Black Bean Sauce and Ohana Flavors Black Bean Sauce found a condition that may support the growth of a bacterium called Botulinum. It could lead to botulism, a potentially fatal form of food poisoning.

"With botulism the product may smell good, it may look good. But if you suspect or it's in a recall, don't take a chance, especially in this case," said Lance Wong, an inspector with the state Department of Health's Food and Drug Branch.

Kam is a former state food inspector and he knows the danger of botulism.  As soon as the FDA notified him, he notified the companies who own and distribute Barb's sauces.

He has answered a lot of phone calls from concerned consumers.

"I've been advising them that if they have unopened bottles to return them to the place of purchase. Or if they have partially consumed bottles they should just dispose of those," he said.

Botulinum is a naturally occurring organism that's found in soil. It's in plants, potatoes and chili peppers.

"In this case it may have been the beans," Wong said.

Contamination can happen when temperatures or acid levels in the product fluctuate after production.

Symptoms like dizziness, double-vision and difficulty breathing occur a few hours after consumption.

The advice is to get medical help immediately.

"The incident that occurred has nothing to do with other products that we produce, or the sanitation of the facility, or the equipment that we use," Kam said.

This is the first product recall in First Commercial Kitchen's thirty years in business.
