Dried Scallop and Egg White Fried Rice

Serve 2

Ingredients:    1 cup dried scallop

3 tablespoon vegetable oil

½ cup Pancetta or ham, dices

½ tablespoon garlic, chopped

2 egg white

4 cups cooked rice

½ tablespoon sugar

2 tablespoon Chinese Thin Soy sauce or Aloha Shoyu

large pinch of ground black or white pepper

2 tablespoons green onions, chopped


~ Soak dry scallop in warm water for an hour or until it's soften, shredded to a small pieces, set aside

~ in a wok or a non stick pan add vegetable oil and Pancetta, cook until the pancetta lender all the fat about couple minutes medium to low heat.

~ Add scallop and garlic cook for 15 seconds add egg white and stir until egg white is cooked.  Turn heat to high, add rice, sugar, Aloha Shoyu, pepper and cook for a few minutes, until they toasted on the outside.  Make sure the rice is not lumpy.

~ Add green onion and toss for 15 seconds, turn the heat off.
