HONOLULU (HawaiiNewsNow)- Chef Chai is back on Sunrise with a yummy recipe that combines the best of Chinese and Filipino cooking.
Serve four
Ingredients:
List A 2 cups China Town Roasted Duck (Boneless)
1/2 cup fresh Shiitake Mushroom (Slices)
1/4 cup green onions sliced
¼ cup Chinese parsley, sliced
2 cups bean sprouts
1 tablespoon roasted Sesame seed
1.5 tablespoons Hoisin sauce
½ tablespoon Siracha chili sauce
½ tablespoon garlic chips
List B 16 pieces or Lumpia wrappers
1 egg wash
some vegetable oil for deep fry spring rolls
1 cup fresh mango and tomato salsa
Preparation:
~ Combine all the ingredients from list A and mix it well, set aside and separate to sixteen portions.
~ With the lumpia wrapper add the mixture to the center and roll like a spring roll (see package for instruction)
~ preheat the oil to 350 degree and fry the lumpia till a golden brown and serve with fresh tomato mango salsa.
Fresh Tomato Mango Salsa
Ingredients: 2 tablespoons of dices ripe mango about ¼ inch
2 tablespoons of dices tomato about ¼ inch
½ tablespoon of chopped onion
½ tablespoon of chopped Chinese parsley
½ tablespoon of lemon juice (optional)
½ tablespoon of Balsamic vinegar
½ tablespoon Sugar
salt and Tabasco to taste
Preparation: .
~To prepare salsa mixes all the above ingredients together. Served with Duck Lumpia as a condiment

Ingredients: 2 cups China Town Roasted Duck (Boneless)
6 cups of Chow Fun noodles
1.5 cup fresh Shiitake Mushroom (Slices)
4 tablespoons vegetable oil
1 tablespoon chopped garlic
1 tablespoon chopped shallot
2 tablespoons Oyster sauce
1 cup green onions (Cut about an inches long)
2 cups bean sprouts
1 tablespoon roasted Sesame seed
pinch of sugar and pepper
Preparation:
~ in a nonstick pan with high heat, sauté the mushroom with vegetable oil until the mushroom turn to a light brown, add garlic and shallot then toss a few times.
~ Add duck meat and noodles sauté for 30 seconds, then add oyster sauce, sugar, and pepper cook for couple minutes (add some chicken stock or water if you use the noodles that been refrigerated)
~ Add bean sprouts, green onion and sesame seed and cook for another minute or until the bean sprouts are cooked.
You may add any cooked vegetable to this recipe to suit your taste
