HONOLULU (HawaiiNewsNow)- With Labor upon us you may be looking for so yummy food ideas. So the whole Sunrise Crew came up with some of their favorite dishes.

College Frittatas

Preheat oven to 350 degrees. In paper cup cake cup, fill halfway with frozen shredded hash browns. The rest cover with mix of mushrooms, Spam, mixed eggs and green onions. Mix in shredded cheese. Place in oven for 15-20 mins.

Sunrise Kim Chee Dip

8 oz Philadelphia Cream Cheese
1.5 cup Kim Chee
Freshly ground pepper

In blender or food processor, blend 1.5 cups of Kim Chee with 8 oz of Philadelphia Cream Cheese. Add freshly ground pepper to taste. Use Kim Chee juice to adjust texture of dip to your preference.

Ingredients:
3 Large Crowns of Broccoli, fresh
2 Cans of Cream of Mushroom Soup (98% Fat Free optional)
1 Can of Cream of Chicken (98% Fat Free optional)
1/2 Large Onion, diced
1 Can of Water Chestnuts, drained and chopped
1/3 Cup of Cheddar Cheese
1 Sleeve of Ritz Crackers, crushed


Lightly steam the broccoli in a saucepan. Drain. Combine all the ingredients EXCEPT FOR THE CRACKERS into a large bowl. Stir until coated evenly.

In a ziploc bag, crush the crackers roughly. They don't need to be too fine. Then cover the bottom of a glass casserole dish evenly. Empty broccoli fixings on top. Add more cracker crumbs to the top. Bake at 350 degrees for about 45 minutes. Should be bubbling and dark brown on top.

Pineapple Pie

Crust:
2 c. sifted flour
1 tsp. salt
3/4 c. shortening
5 Tbsp. water

Mix flour and salt in bowl. Work in shortening until the pieces are the size of peas. Sprinkle water over the mixture, tossing lightly. Work dough into firm ball and divide in half. Roll dough about 1/8 inch thick on lightly floured surface. Place in pie plate and trim even with edge of plate. Add filling. Roll other half of dough and place over filling. Trim edges and seal. Cut small steam vents in top of crust.

Filling:
3/4 c. raw brown sugar
2 Tbsp. Minute tapioca
1/4 tsp. salt
1/4 tsp. grated orange peel
2 1/2 c. canned crushed pineapple, drained
2 Tbsp. of the drained syrup
1 Tbsp. butter

Mix brown sugar, tapioca, salt, and grated orange peel. Add 2 Tbsp. of the drained syrup to crushed pineapple. Mix and place in unbaked pie shell. Dot with butter. Cover with top crust and seal edges. Bake at 400 degrees for 15 minutes. Reduce temperature to 375 degrees and continue baking for 30 minutes.

Spicy Salmon Cakes
1 lb cooked salmon
1 1/2 cup panko or breadcrumbs
1/2 red bell pepper, finely diced
1/2 onion, finely diced
2 tsp. Old Bay Seasoning
1 tsp. Tobasco or hot sauce
2 eggs
salt and pepper to taste
red pepper flakes to taste
2 tblspn. Dill
20 blades of chives, chopped
zest of 1 lemon
 
Dipping Sauce
1/2 cup Mayonnaise
1/2 cup Siracha
2 tblspns. Dill pickle relish
