Sam Choy's Kitchen recipe: Shrimp Pasta Salad Combine warmed grilled shrimps, vegetables, grilled vegetables, Balsamic Vinegrette, Mango and add feta cheese, salt and pepper to taste.
1 C each diced Zucchini, Yellow Squash, Red bell pepper, yellow bell pepper, button mushrooms, and red onion. Add 1/4 c veg oil and 2 T minced garlic and grill on slotted pan. Grill 2 lbs of shrimp Add 1/4 c veg oil and 2 T minced garlic and grill and set aside. Add 1 C diced cucumber 1 C diced tomato 1 C diced mango 1/4 C minced cilantro 2 t lime or lemon zest 1/2 C feta cheese 1 C cooked farfalle pasta (bowtie)
Balsamic Vinaigrette 1/2 C Balsamic Vinegar 1/4 C Brown Sugar 1/2 C Extra Virgin Olive Oil 2 T Minced Ginger 2 T Minced Garlic 1 T Cajun Seasonings 2 T Minced Sweet Basil 1 T Dijon Mustard
