HONOLULU (HawaiiNewsNow) -  Chef Chai is back for his weekly Chai's Choices segment. Today it's all about clams! Chef Chai is making clams with black bean and clams with linguine.

 

Fresh Manila clams with black bean sauce (serves two)

Ingredients:

1.5 lbs fresh Manila clams

2 tablespoons of vegetable oil

1 tablespoon of chopped garlic

2 tablespoons of diced onion

1 tablespoon of Red Jalapeno Pepper

1 tablespoon of salted Chinese Black Beans

2 tablespoons of Oyster sauce

1.5 cup chicken stock

½ tablespoon cornstarch mix with 2 tablespoons water

1 tablespoon of chopped green onion

Salt and Pepper to taste (Some black beans is very salty, you may not need to add any salt)

 

Preparation:                  

Clean the clams by rinsing trough the water until all the mud and sand are removed.

In a sauté pan on medium heat, add vegetable oil, onions and garlic. Sauté` for a few seconds and then add clam and cook for a minute then add chicken stock, chili pepper black beans and oyster sauce.  

Keep cooking until all the clams are open. Stir in the cornstarch mixture and bring to a boil.  Finish by adding the green onion and season with salt and pepper if need. Turn off the heat.

 

Linguini with fresh clams

Ingredients:

1 lb Linguini

1.5 lbs fresh Manila clams

2 tablespoons of vegetable oil

3 strip of Bacon cut to small pieces

1 tablespoon of chopped garlic

2 tablespoons small dices shallot

1 cup white wine

1 cup chicken stock or clam juice

3 tablespoons butter

1 tablespoon of fresh herbs

Salt and Pepper to taste

½ cup shredded parmesan cheese

 

Preparation:          

Clean the clams by rinsing trough the water until all the mud and sand are removed.

Cook the linguini according to the package instruction about 3/4 way.

In a sauté pan on medium heat, add vegetable oil and bacon cook for a minute then add shallot and garlic sauté for 10 seconds add clam and cook for 30 seconds add white wine and chicken stock and bring to a boil.

Remove linguini to the pot and add to the clams, season with salt and pepper cook until the clam start to open.  Add butter and fresh herbs, turn off the heat.
