Breading: 3 gallons all purpose flour ¼ cup granulated garlic ¼ cup onion powder ¼ cup Kosher salt 2 tablespoons ground black pepper ½ cup thyme 3 eggs, beaten 2 cups buttermilk 1 teaspoon Tabasco
Combine first six ingredients and stir to combine. In a separate container mix the eggs, Tabasco and buttermilk. Bread the steak using the standard dry, wet, dry method.
Country Gravy: 1 cup onions, julienne 2 quarts chicken stock 2 quarts milk ½ teaspoon thyme 1 pound butter 2 cups flour Salt and pepper, to taste
Add butter and onions and cook for 5 minutes. Add the flour and cook for an additional 3 minutes. Add chicken stock and bring to a simmer. Add the milk and bring to a boil before adding the thyme. Let simmer over medium heat for 20 minutes. Adjust seasoning with salt and pepper.
