WAIKIKI (HawaiiNewsNow) - The 8th annual Waikiki Spam Jam takes place this weekend. Spam can be mighty tasty in fried rice or musubi. But there's so much more you can do with it!

Spam Mahi Mahi ala Carbonara


  • 4 qty 4oz. filets of Mahi Mahi or other reef fish
  • 4 oz. julienne SPAM
  • 2 oz. julienne asparagus
  • 2 oz. julienne green beans
  • 8 oz. cream
  • 1 tsp. shallots
  • 1 egg yolk
  • 2 oz. fish stock
  • Grated parmesan cheese
  • White wine
  • Salt and pepper

Fish preparation:

  • Pan sear Mahi Mahi in hot skillet
  • Deglaze with white wine
  • Add 2 oz. fish stock
  • Transfer to 400 degree oven
  • Bake for 10 minutes


  • Sautee SPAM in olive oil until light brown
  • Add shallots
  • Deglaze with white wine
  • Add cream and reduce
  • Blend in green beans, asparagus, and whisked egg yolk
  • Add a pinch of parmesan
  • Salt and pepper to taste

Place Mahi Mahi in center of plate and top with sauce.
