One pork loin cut in half
One pound butter, cut into cubes
Three and one half cups finely chopped macadamia nuts, toasted
Two cups sweet bread crumbs
One quarter cup parsley, chopped
Honey to drizzle
Sear pork loin in the oven at 500 degrees for 15 minutes. Remove from the oven and allow to cool.
In a mixing bowl, combine butter, macadamia nuts, bread crumbs, parsley and mix until blended. Coat the top of the pork loin with macadamia nut crust mixture. Drizzle the crust with honey and return to the oven.
Bake at 350 degrees until golden brown.
Allow the pork loin to rest for a few minutes before slicing.
